First Course

  • Beef Carpaccio: shallot, parmesan, capers, rocket, brick
  • Salmon Rouleaux: peas, lemon mousse, mint, prosciutto, pink petter
  • Watermelon: cherry tomato, sunflower seeds, basil, little gem, shallot

    • Second Course

  • Duck Terrine: rillette, parfait, rhubarb gel, watercress, pear, brioche, px jus
  • Scallops: saffron escabeche, fennel, pine nuts, raisins, carrot puree
  • Aubergine Conchiglioni: capsicum creme, capers, almond, parsley crumble

    • Main Course

  • Holstein Tournedos: pomme puree, spring vegetables, pecorino, salsa verde, jus de veau
  • Lamb Rump: beetroot, pomegranate, baby carrot, goat’s cheese creme, lentil puree
  • Beetroot Kataifi: oyster mushroom duxelles, walnut pistau, smoked celeriac creme, red wine sauce
    • You have experience as Sous Chef or Chef de Partie;
    • Your ability to innovate in the kitchen sets you apart. You’re eager to bring inventive ideas;
    • You have strong leadership and communication skills;
    • You have excellent planning and organizational abilities;
    • You are diligent, responsible and have a keen eye for detail;
    • You’re passionate about ethically sourced ingredients and environmentally conscious practices;
    • You are able to thrive under pressure;
    • You preferably speak Spanish fluently. Dutch and English are a plus!
    • You are legally permitted to work in the Netherlands, holding an EU/EEA passport or a valid dutch work permit;
    • You live in Amsterdam (or nearby).
