A very successful family-owned group of restaurants is looking for a responsible and critical Sous Chef to run their Amsterdam location! Are you passionate about seafood, and eager to continue to grow somewhere your work and effort will genuinely be appreciated? Then don’t hesitate to apply!

What will you do?

    As Sous Chef you will be the Chef’s right hand. You will lead the kitchen team and ensure that everything runs smoothly and that the team works with a smile. You will also assist the Chef in overseeing food costs and drawing up the rosters, as well as training and coaching your colleagues.
You will also filet and prepare fish, check the quality of the seafood supply, and check the dishes before they are served to the guests. Together with the Chef, you will be jointly responsible for ensuring the high quality of food and hospitality.

Fingerfood

  • Fried fish pieces ‘kibbeling’ with tartar sauce
  • Dutch shrimp croquettes
  • Grilled octopus from Galicia
  • Vongole (clams) and razor clams with white wine sauce, garlic and cream
  • Sashimi from salmon, scallop and sea bass

Plancha and Fruits de Mer

  • ‘Nordic Blu’ Salmon filet with vichyssoise and grilled leek
  • Turbot on the bone with beurre noisette and fried capers
  • Fruits de mer: Mussels, cockles, razor clams, unpeeled shrimps, vongole (clams), periwinkles, shrimps, house salad, Tourteau crab, seaweed salad and oysters

Pasta, plateau & salade

  • Ravioli with green asparagus, tomato sauce and parmesan cheese
  • Spaghetti vongole
  • Plateau: Fresh salad, smoked mackerel, shrimps, house salad and two types of smoked ‘Nordic Blu’ salmon
  • Salad: Scampi, mango and avocado

Who are you?

  • You have experience in managing a kitchen and kitchen team;
  • You are passionate and knowledgeable about seafood;
  • You have strong leadership and communication skills;
  • You are a stress resistant team player;
  • You have a good command of the Dutch and English language;
  • You are legally permitted to work in the Netherlands, holding an EU/EEA passport or a valid dutch work permit;
  • You live in Amsterdam (or nearby).

Terms of Employment

  • Full-time monthly salary of up to €3200, depending on your experience, plus about €500 in monthly cash tips;
  • A bonus of up to €750, depending on targets achieved;
  • A welcome bonus of €250 when you complete your probationary period;
  • Travel allowance if you live more than 10 km away from your workplace;
  • It’s important that you do what you do best. Have you finished your shift? Then you leave the cleaning to the cleaning team!
  • 26 vacation days based on full-time employment;
