What will you do?

As Demi Chef de Partie, you will collaborate with the team to develop, produce, and present a la carte dishes and items. You will work in an assigned station, preparing food products to the highest standards, following the hotel’s recipes, minimising waste to ensure food costs are within budget, and keeping your station clean and orderly at all times. When appropriate, you will interact with guests, proposing alternate menu items, fulfilling their specific requests, and exceeding their culinary expectations.

Small plates

  • Croquetas with Iberico ham or shitake mushroom
  • Seabass ceviche with avocado, cream, coriander, chilli and lime
  • Watermelon Gazpacho with cucumber, peppers, toast and mint
  • Boquerones: Marinated anchovies, espelette pepper, toasted bread and grated tomato
  • Angus beef carpaccio with Parmesan, arugula and crispy capers

Main dishes

  • Gnocchi with tomato sauce, burrata emulsion, black olive powder and basil
  • Spinach & ricotta Tortelloni, with zucchini cream, dry tomato, parmesan flakes
  • Zeeland mussels with white wine, herbs, lemon and French fries
  • Atlantic octopus with buttery potato purée, sautéed mushroom and criolla sauce
  • Butterflied Dorade with fennel, padron peppers, piquillo pepper and garlic

Desserts

  • Crème brûlée with caramelised orange
  • Manchego cheesecake with cookie crumble, fresh berries and berry compote
  • Valrhona chocolate mousse with passionfruit, speculoos crumble and caramel sauce
  • Traditional Dutch Apple Pie, with whipped cream
  • Homemade ice cream & sorbet: Raspberry, vanilla, chocolate, passion fruit, mango & mandarina

Who are you?

  • You have at least one year of experience as Demi Chef de Partie or 3 years as Commis Chef in an a-la-carte restaurant or luxury hotel with high quality standards
  • You have a diploma in food production / culinary arts, or equivalent on-the-job training
  • You are passionate and knowledgeable about Mediterranean cuisine!
  • Your schedule is flexible! Your work days and hours might vary according to operational needs
  • You know the regulations regarding hygiene and food safety (HACCP)
  • You have excellent English language and communication skills (and preferably in Dutch)
  • You are legally permitted to work in the Netherlands, holding an EU/EEA passport or a valid dutch work permit
  • You live in (or nearby) Amsterdam
