Chef de Partie for trendy Middle Eastern hotel restaurant

One of the largest hospitality companies in the world is looking for a dynamic and ambitious Chef de Partie just like you to join the restaurant of one of their properties in Berlin!

What will you do?

As Chef de Partie, you will be responsible for the preparation of the daily mise en place and dishes. You will ensure that your shifts run smoothly and all your daily tasks are achieved, carrying out quality controls for dishes and their presentation, cooperating with all the other necessary departments, complying with the specified stock levels and hygiene and HACCP regulations. Whenever necessary, you will also assist with the induction of trainees and interns into the kitchen team.

Starters

  • Pani Puri: fish tartar, yoghurt foam, tabasco aioli, basil
  • Smoked eggplant carpaccio: pistachio, date honey, tahini, feta snow, rose petals
  • Sea Tzatziki: hamachi sashimi, yuzu panna cotta, parsley coulis, yuzu foam, almonds, peach, finger lime, samphire, celeriac
  • Mushroom Quatayef: lebanese savoury pancake with leek and mushrooms, served with white miso and date molasses sauce
  • Main Dishes

  • Lamb chops: onion stuffed with lamb ragout, Jerusalem artichoke, baby artichoke, labneh, broad beans, couscous, tschirchi
  • Sea fish fillet: calamari, fried gnocchi, tomato sauce, eggplant cream, hazelnut crumble, almonds cherry tomato, basil
  • Scallops: cauliflower, asparagus, parsley wild garlic cream, milk foam, macadamia nuts, sorrel, yuzu beurre blanc
  • Moroccan couscous: fried Halloumi, artichokes, pees, pan sauce and tschirchi
  • Dessert

  • Chocolate cremo: Salted caramel foam, candied almonds, cocoa sticks, black coffee dust, date brioche
  • Campari Tart: Buttermilk foam, olive oil ice cream, hibiscus powder
  • Malabi: Kadaif, candied pistachios, rhubarb and plum comfiture, cherry sorbet, hibiscus powder
    • You have experience as Chef de Partie
    • You have a completed training in the hotel or hospitality industry
    • You are enthusiastic about cooking, creative and reliable
    • You have a positive, charismatic and a self-confident attitude
    • You are open-minded and enjoy working in a strong team
    • You know the regulations regarding hygiene and food safety (HACCP)
    • You have a good command of the English language. German or Hebrew is an advantage
    • You are legally permitted to work in Germany, holding an EU/EEA passport or a valid work visa
    • You live in Berlin (or nearby)
