Chef de Partie for French brasserie

A brasserie in Amsterdam is looking for a passionate Chef de Partie to join their motivated team! Starter

  • Roasted pumpkin soup with strained yoghurt of Kefir and pomegranate
  • Beetroots with spiced strained yoghurt, hazelnut and herb salad
  • Shore crab bisque with coquille, gamba and croutons
  • Paté Provençal with herb salad, pickled vegetables, grapemust and chicken gravy
  • Pork rillettes with mesclun, pickled vegetables and toast

Main Course

  • Catch of the day with brussel sprouts, Dutch Shrimp, almond and sauce vert
  • Seabass on the fishbone with beurre blanc, ratatouille and rice
  • Poussin with sauce verte, chicken gravy, fries and mixed salad
  • Rouleau of savoy cabbage with duxelles, salsify and pommes mousseline
  • Rib-Eye with mushroom gravy, fries and mixed salad

Dessert

  • Ice cream with praliné, vanilla, lemon and strawberry

What will you do?

    As Chef de Partie, you will independently manage your section of the kitchen. Together with the Chef, you will develop recipes and handle the full preparation of the dishes that fall under your section.
Your responsibilities will include accurately evaluating the quality of the fresh products every day, monitoring the kitchen’s strict standards and ensuring that the quality and presentation of each dish is just right. Additionally, you will be involved in preparatory work by supervising the work of the Kitchen Assistants and providing them with guidance and instructions as needed. You will always be willing to develop yourself further, try out new recipes and outdo the expectations of guests, your colleagues and even yourself!
  • You have at least 2 years of experience as Chef de Partie or similar
  • You can demonstrate your proficiency with professional cooking techniques
  • If you already have experience with French cuisine, that’s an advantage!
  • You’re legally permitted to work in the Netherlands, holding an EU/EEA passport or a valid dutch work permit
  • You live in Amsterdam (or nearby)
