Chef de Partie for French brasserie
Starter
- Roasted pumpkin soup with strained yoghurt of Kefir and pomegranate
- Beetroots with spiced strained yoghurt, hazelnut and herb salad
- Shore crab bisque with coquille, gamba and croutons
- Paté Provençal with herb salad, pickled vegetables, grapemust and chicken gravy
- Pork rillettes with mesclun, pickled vegetables and toast
Main Course
- Catch of the day with brussel sprouts, Dutch Shrimp, almond and sauce vert
- Seabass on the fishbone with beurre blanc, ratatouille and rice
- Poussin with sauce verte, chicken gravy, fries and mixed salad
- Rouleau of savoy cabbage with duxelles, salsify and pommes mousseline
- Rib-Eye with mushroom gravy, fries and mixed salad
Dessert
- Ice cream with praliné, vanilla, lemon and strawberry
- Tarte bourdaloue with crème fraîche and pear sorbet
- Chocolate cake with praliné
- Coupe colonel: vodka and lemon sorbet
- Cheeses: Petemoei, Sangles, Bleu de Berry and Epoisses, with port syrup and Sardinian bread
What will you do?
- As Chef de Partie, you will independently manage your section of the kitchen. Together with the Chef, you will develop recipes and handle the full preparation of the dishes that fall under your section.
- You have at least 2 years of experience as Chef de Partie or similar
- You can demonstrate your proficiency with professional cooking techniques
- If you already have experience with French cuisine, that’s an advantage!
- You’re legally permitted to work in the Netherlands, holding an EU/EEA passport or a valid dutch work permit
- You live in Amsterdam (or nearby)
